Location

During the exam period, on Tuesday 30 May, there will again be a UB Dinner. For this fifth edition, based on the theme of Mexican cuisine, an authentic recipe has been chosen from the Allard Pierson's extensive gastronomic collection.  

What is known today as Mexican cuisine is generally considered to be a fusion of cooking techniques and ingredients of the indigenous peoples, including the Toltecs, Mayans and Aztecs, with those of the Spanish colonists. The later French influence on Mexican cuisine was also important in this regard. Furthermore, early 20th-century immigrants contributed to the rich Mexican culinary culture with their own cooking traditions and eating habits.

Menu

Vegan Lentil Stew with dark chocolate and cinnamon. With roasted carrot and sourdough bread as a side dish.
